Spring has sprung has so has the latest seasonal flavor: Lemon Bar Cookie. It starts with a shortbread-like lemon cookie topped with lemon curd (if you look closely you can see the lemon zest!) and sprinkled with powdered sugar. I walked past a bakery case, saw a lemon bar and instantly needed to have it. Then I decided to do my version as a cookie. You're welcome.
